Overnight Oats



Oats can be for summer as well as winter.  It is spring, and the mornings still have a nip in them, not enough to have a hankering for hots oats. A bowl of cold oats is surprisingly delicious.  This recipe also has extra goodness with the chia seeds and plant milk. So simple to as there is no cooking just a stir of the ingredients before going to bed and you wake up to an instant breakfast.  Just add a topping of your choice or try one listed below.


Ingredients

2 servings

1 cup rolled oats
1 cup of plant milk of choice (I used unsweetened almond milk)
2 tsp chia seeds
2 tsp of maple syrup (or more if you have a sweet tooth)

Just mix together in a bowl, cover and place in fridge overnight.
Serve with topping of your choice and a spoon of coconut yogurt.
This keeps well for several days in the fridge, so you could make a big batch for the week
.
Toppings
Stewed fruit
Berries
Sliced caramel banana (fry sliced in pan for a few minutes) with walnuts
My favourite –
Roasted grapes and walnuts  - roast grapes for 5 minutes and add walnuts and roast for a further few minutes being careful not to burn them) Make a big batch as this mix is great scattered over salads etc. The grapes are like little teaspoons of honey.
Diced mango and shredded coconut.
