Carrot Fritters


 
A nice change from the usual potato fritters.  Coconut yogurt is the perfect dressing to counteract the sweetness of the carrots.

Ingredients 

2 carrots grated
1 egg (Vegan option, a flax egg consisting of 1 tbsp flax seeds ground with 3 tbsp water and left to soak for 10 minutes.)
tbsp chopped parsley
sprinkling of garlic powder
3 tbsp chickpea flour (besan0
1/2 ts turmeric powder
1/4 tsp of minced ginger.
salt

Directions

In a bowl mix the grated carrot, parsley and minced ginger, ad the garlic powder and turmeric powder.  Add egg stirwelland then add the chickpea flour. and salt.

Heat some oil in fry pan and put tbsp of mix  in pan and spread the mix out to make them quite thin, cook on a fairly low heat till the bottom is firm and then flip over and cook till solid. ( Take care as the carrot will char very quickly. )

Serve with a green side salad and a dollop of coconut yogurt.
